Rinsed short-grain sushi rice (1/3 cup)
Sushi Vinegar (1/3 tablespoon)
Rice Vinegar (1/3 tablespoon)
Sugar (5 tablespoon)
Salt (3 tablespoons)
Water (4 cups)
Salmon or sushi grade tuna (4 to 6 ounces)
Wash the rice thoroughly, drain it and place it still for about 30 minutes. Place the rice inside the rice cooker and put in 4 cups of water. Allow the water to boil, cover the pot and reduce the heat to simmer for 15 minutes. Replace the cover with a damp towel and allow it to cool for 10 minutes.
